Judges ready to make their mark

LAKE HAVASU CITY – This weekend is Arizona’s largest barbeque competition. With $14,000 in prize money on the line, more than 80 competing teams rely on the judges’ training to know what good barbeque should taste like.

Cheryl Ramsden, event coordinator, said that the competition is going to require 90 judges and table judges.

Thursday evening at BBQ Bill’s, a special training for the judges took place. Perspective judges were schooled on look, taste, the pull test and even learned how to check if the ribs have been cooked correctly.

BBQ Bill’s owner Bill Haddad started cooking a variety of chicken, pork ribs, pork shoulder and brisket at 8 a.m. Thursday for the judge’s class.

Those that attended the class also received a Kansas City Barbeque Society judging certificate. The holder of this certification is then allowed to be a judge at any BBQ competition around the United States and the privilege to be a judge at this weekend’s Hava BBQ competition.

“It’s not what you like, but did the competitor meet the standards of KCBS? Did the cook achieve the culinary skills to make good barbeque” said Master Competition Barbeque Judge, Merl Whitebook.
